Prepare and Use

Cooking Instructions 1kg Batter Mix, 1.5 litres cold water 3.5kg Batter Mix, 5.25 litres cold water Step 1 Weigh out the required quantity of mix into a mixing bowl and add the cold water. Step 2 Whisk on a slow speed for 30 seconds, then scrape down. Whisk for a further 3 minutes to form a creamy batter. Step 3 Pat dry the surface of the food to be covered, toss in flour, then coat with the batter. Step 4 Fry at 160°C-180°C until piping hot throughout and golden in appearance. All fryers vary. Consult manufacturer's hand book to determine the best frying temperature. Hint & Tips Add beer or lager instead of water to give a light and crispy beer batter. Use sparkling water instead of tap water to give a lighter, crisper, tempura style batter. Flavour your batter with spices such as cumin, curry, cinnamon or nutmeg.
